In my previous post I shared the recipe for an easy and delicious chocolate covered fruit smoothie made from whole fruits and vegetables.
I also shared the simple fruit smoothy recipe I’ve adapted from this post.
This recipe has a lot of ingredients, but it’s relatively simple to make.
Here’s the recipe: 1 cup shredded coconut 2 cups spinach 1 cup sweet potatoes, chopped 3/4 cup frozen mangoes, frozen 1/4 banana 1 cup banana powder 1/2 cup fresh lemon juice 1/3 cup fresh orange juice 1 teaspoon dried thyme 1/8 teaspoon dried oregano 1/16 teaspoon dried basil 1 teaspoon fresh parsley 1 teaspoon salt 1 cup frozen strawberries 2 cups fruit pulp 1/5 cup sugar 1 teaspoon cinnamon 1 teaspoon nutmeg 1 teaspoon ground ginger 1 teaspoon vanilla extract 1 cup unsweetened applesauce (I used apple cider vinegar) 1/1 cup shredded fresh coconut (or 1/6 cup of frozen mango) 1 1/ 2 cups of frozen spinach (optional) For the fruit smoothi 1 cup whole fruit, shredded (or chopped) 1 banana, peeled and cut into 1/ 4-inch pieces 1 orange, peeled, cut into 3/8-inch slices 1 grapefruit, peeled or chopped into 1-inch segments 1 mango, peeled into 3-inch lengths (or 1 large mango) 2 cups frozen mango (1 mango is roughly the same size as a banana) 1 teaspoon freshly ground cinnamon (optional) 1 tablespoon finely chopped fresh ginger 1 tablespoon freshly ground nutmeg (optional, but recommended) 1 cup strawberries, peeled 1 cup spinach, chopped or 1 1 1 / 2 cups sweet potatoes (chopped into 1 inch pieces) 2 tablespoons unsweeten applesaucer (I use apple cider) 1 /2 cup sugar (optional – but recommended for a thicker smoothie) For more fruit smoothios 1/2 banana, sliced in half 1/ 8 cup frozen bananas (if you want to use frozen strawberries) 1 medium mango, sliced into 1 1-1/4-inch strips 1 grapeapple, sliced or sliced into 3 inch lengths 1 orange in a slice 1 grape fruit in a sliced piece of fruit, or 1/12 cup frozen grapes For the ice cream 1 can sweetened condensed milk 1 cup ice cream 1/ 6 teaspoon vanilla (optional for a thinner smoothie.
It makes a good garnish!)
Instructions In a medium saucepan over medium heat, melt the coconut in a small saucepan.
Add the spinach, sweet potatoes and banana.
Cook until soft, about 5 minutes.
Add in the mango, mango and orange slices and cook for another 2 minutes.
Drain the spinach and add the chopped banana to the pan and stir in the juice, pineapple, lemon juice and dried thymes.
Bring to a simmer.
Simmer for about 30 minutes, stirring frequently.
Transfer the coconut mixture to a blender and blend until smooth.
In a large bowl, combine the coconut cream, sugar, cinnamon, nutmeg, ginger and vanilla extract.
Pour into the icecream and stir until completely blended.
Spread into an even layer on a sheet pan and freeze for at least one hour.
For the frosting 1 stick unsalted butter, softened to room temperature 1 teaspoon cream of tartar 1 tablespoon fresh lemon zest 1-2 tablespoons fresh thyme 1 cinnamon stick 1 whole cinnamon stick (optional but recommended if you like your cinnamon a little more spicy) For a thinner fruit smoothier smoothie 1 banana, cut in half, peeled 1 orange, cut with a serrated knife 1 grapefruit cut in halves 1 mango cut in 1/32-inch chunks 1 lime cut in quarters 1 ripe grapefruit 1 lemon 1 small orange 1 large grapefruit (about 1 1.5 ounces) 1 lemon zEST 1 tbs vanilla extract 1 tsp ground ginger 1 tbsp fresh ground nutme Directions For the creamy, smooth frosting: Melt the butter in a medium bowl.
Add all the dry ingredients to the butter and stir to combine.
Add to the ice Cream and stir again until smooth, about 2 minutes, scraping down the sides of the bowl occasionally.
Pour the frozen fruit pulp and juice into a blender or food processor and blend on high speed until smooth and creamy.
Add the vanilla and ginger.
Blend on low speed for about 20 seconds until the vanilla is well incorporated.
Tip the whipped cream into the frosted mixture.
Serve with whipped cream or whipped cream cheese for dipping.
